Item Characterization and assessment of the antimicrobial function of total polyphenol extracts from pulps, leaves and seeds of two ceratonia siliqua L. varieties(2021) Yahiaoui, K.; Bouchenak, O.; Boumaza, S.; Toubal, S.; Blizak, Meriem Djanette; Nouani, A.; Arab, K.The overall phytochemical test results suggested that pulp, seeds, and leaves of both grafted and spontaneous varieties are especially rich in tannins , saponins, and leuco-anthocyanins. The result of the determination of total polyphenols Ceratonia siliqua L. showed that spontaneous leaves showed that the highest value of spontaneous leaves was 14 EAGmg / g, followed by grafted seeds (11.5 EAGmg / g), and spontaneous pulps (10.2 EAGmg / g). Infra -red spectroscopy revealed the presence of many functional groups in both varieties. The antimicrobial activity is particularly found with the spantaneous leaves against Escherichia coli (21.83 ± 0.93 mm) and Staphylococcus aureus (16.36 ± 0.63 mm) Microccus sp (15.83 ± 0.73 mm) and leaves grafted against Pseudomonas aeruginosa (14.30 ± 0.35 mm)Item Hydration rate influence on the couscous quality(World Food Ltd. and WFL Publishers, 2017) Lefkir, S.; Yesli, Abdenour; Ounane, Ghania; Yahiaoui, K.The couscous is a product made from durum wheat grains, and is one of the oldest cereal foods of the Maghreb countries. Couscous manufacturing process consists of a series of steps: kneading, rolling, precooking and drying. The couscous quality depends on the raw material implementation and the manufacturing conditions. The aim of this study was to assess, on commercial durum wheat semolina, the influence of hydration on the technological characteristics of couscous. Traditional couscous has been hydrated by varying the hydration rate (34%, 36% and 38%). The overall results show that the quality of couscous varies with the change in the hydration level, regardless the used semolina. Indeed, it appears that increasing the hydration level increases couscous yields and thus results in larger granulometry and more uniform product, while the coloring is degraded. Ces ravageurs peuvent provoquer des dégâts économiquement importants en l'absence de toute intervention sanitaire. Pour cela, un inventaire des ennemis et des auxiliaires de l’olivier est réalisé au lac de Réghaia, dans le but de connaitre les différents ravageurs. Les résultats émanant de cette étude ontrévélé la présence de treize espèces d’arthropodes, sept champignons, une bactérie (Pseudomonas savastanoi), et un lichen indéterminé. The global olive oil industry annually generates many tons of olive leaves as waste.The present study aims at a valorisation of Algerian olive leaves harvested from the region of Bouirafor therapeutic use. In order to evaluate the biological effects of the wild olive tree, chemical characterization tests of the leaves were carried out in the Natural Substances Laboratory of Saidal group according to their validated protocols drawn from the French pharmacopoeia. A phytochemical screening has been realized and whose purpose is to refer to the extraction, screening and identification of the medicinally active substances in the plant. Different extractions have been carried out in several solvents in order to extract bioactive molecules from the leaves using several solvents. Subsequently, a pharmacological characterization has been completed by determining the following: antioxidant activity of the extracts was evaluated in vitro by the DPPH method, anti-inflammatory activity was studied in vivo by induction of carrageenan oedema; the antibacterial activity was achieved by the agar medium diffusion method.
